Small Steaks, Bearnaise

Procure six small sirloin steaks of four ounces each. Mix on a plate one tablespoon oil with a teaspoon salt and half teaspoon white pepper; repeatedly turn over the steaks in the seasoning. Arrange on broiler and broil for five minutes on each side. Spread a hot Bearnaise sauce on a hot dish, arrange steaks over the sauce and serve.
