Baked Cucumbers

Peel good-sized cucumbers, cut them in two lengthwise and remove the seeds and soft part, keeping the shape perfect. To three cucumbers take three-quarters of a cup of fine soft bread crumbs and rub into them a piece of butter the size of an egg, and a little finely chopped onion; season this with pepper and salt and a dash of cayenne. When thoroughly mixed, fill each half of the cucumber, heaping it; sprinkle browned crumbs over the top with some tiny bits of butter and place them in a baking pan with a little water and bake in a moderate oven about three-quarters of an hour or until they are tender and a nice brown. Garnish the dish with parsley.
