Green Gooseberries
Cook the berries in water until white, but not enough to break them; put into cans with as little water as possible, fill up the can with boiling water and seal; when opened pour off water and cook like fresh berries. - Mrs. O. M. S.
This is open-kettle canning: fruit and boiling water sealed in a jar with no processing afterward. The method was standard in 1877 and is no longer considered sound, so the notes below explain the failure points rather than offering a revised procedure.
- No processing step at allThe jars are filled and sealed but never heated in a boiling-water bath, so nothing establishes a reliable vacuum seal or destroys mold and yeast introduced during filling. Current practice for any fruit in glass is a timed water-bath or steam process, and no such time is given here.
- No quantities, headspace or jar sizeThe recipe specifies neither the weight of fruit, the size of the can, nor the space to leave at the top. Without headspace a jar cannot pull a vacuum as it cools, and the recipe gives no way to judge whether a seal formed.
- Acidity is not the whole storyGooseberries are genuinely acidic, around pH 3, which is why botulism is not the primary hazard here. The realistic outcomes are mold, fermentation and blown seals, none of which the original gives any means of detecting before the jar is opened.
- "Cans" in 1877The word could mean a glass jar with a zinc cap and rubber ring, or a tin can closed with solder. Neither closure behaves like a modern two-piece lid, and the sealing instructions here assume equipment no longer in use.
- "Until white"Green gooseberries go from opaque bright green to a pale, translucent, faintly grey-green as the flesh cooks through. That is the visual cue being described, and it happens within a few minutes of simmering; going further bursts the skins, which is the failure the recipe warns against.
- Water-packing without sugarPacking in plain water rather than syrup fits the way the fruit was used: drained on opening and then "cooked like fresh berries" into a pie, fool or sauce with sugar added at that stage. Sugar is not what makes canned fruit safe, and at canning-syrup strengths it does not preserve the fruit either.
- If you want canned gooseberriesUse a current tested recipe from a food-preservation authority, which will specify jar size, headspace, syrup and a processing time by altitude.
Buckeye Cookery and Practical Housekeeping (1877) appeared just as home canning in glass was moving from novelty to routine, and its fruit chapter reads like a collection of neighbours' methods rather than tested procedure -- hence the initials at the end of this one. Gooseberries were a staple of Midwestern and New England kitchen gardens because the bushes are hardy, crop early, and give a hard, intensely sour green fruit; they were picked underripe on purpose, for pies, fools and tarts. The instruction to put them up plain and cook them later "like fresh berries" reflects how the fruit was used: not as a preserve in its own right but as a way of stretching a short season. American gooseberry growing contracted sharply in the early twentieth century, when the bushes were found to host white pine blister rust and several states restricted their cultivation, which is part of why the fruit is far less familiar here now than it remained in Britain.
