Gooseberries, Green, to Bottle
Gather some gooseberries on a dry morning, and use them on the same day that they are picked. Warrington's are the best for this purpose. They should be fully formed, but quite hard. Take off the tops and stalks without bruising the skins, and reject any that are not quite sound and whole. Put them into dry, wide-necked bottles, nearly fill them with water, and place these up to the necks in a saucepan of cold water. It is well to twist a little hay or straw round each bottle, to prevent them touching each other and being broken. Bring the contents of the saucepan slowly to a boil, and then lift it from the fire, and let the bottles remain in it until the goose-berries are sufficiently scalded. In order to ascertain when this is the case, look at one of the bottles, and when the fruit has risen from the bottom it is done enough. Pour a little brandy over the fruit, to prevent it getting mouldy. Cork and seal securely, and cover the corks with bladder. Place them on their sides in a cool, dry place, and before using pour off the greater part of the water, and add sugar according to taste. Time, five or ten minutes after the water has boiled. Probable cost of gooseberries, 3d. per quart.
This is a nineteenth-century method for putting up green gooseberries in water, and it is a preserving procedure rather than a dish. The points below explain the terms and why the method itself is the problem.
- The seal is the failureA cork covered with bladder does not produce a vacuum seal, and such a closure is unlikely to stay airtight through the temperature swings of a larder. Modern home canning depends on a lid that pulls down under vacuum and can be checked; a cork can pass air and mould spores for months without any outward sign.
- The process is unmeasured"Five or ten minutes after the water has boiled" with the pan off the heat, judged by whether the fruit has floated, is a scald and not a process. There is no jar size, no headspace, no altitude allowance and no verified holding temperature, so nothing here can be checked against current water-bath canning tables.
- Brandy is not a preservative hereA little brandy poured over the top of a water-filled bottle is diluted far below any concentration that inhibits growth. It floats and discourages surface mould in the short term; it does nothing to the contents. The book is candid that its purpose is to stop mould, which tells you the author expected mould.
- Acidity helps but does not rescue itGreen gooseberries are genuinely high in acid, which is why this sort of thing worked often enough to be printed. High acid makes Clostridium botulinum unlikely, but it does not prevent yeasts, moulds and spoilage bacteria, and mould growth in a sealed low-oxygen fruit pack can raise pH over time. Use a current tested recipe for canned gooseberries if you want to put fruit up.
- Glass in a saucepanThe straw or hay wrapped round each bottle is there, as the recipe says, to stop the bottles touching each other and breaking in a rattling pan. The advice is sound as far as it goes, but ordinary bottles are not made for thermal cycling the way jars intended for preserving are.
- Warrington'sA named Victorian gooseberry variety, a late red associated particularly with the north of England. It is not a supermarket item now; the recipe's real requirement is any hard, fully formed, underripe green fruit.
- BladderA pig's or ox's bladder, soaked, cut into rounds and tied down wet over the cork so that it shrank tight as it dried. It was one of the common nineteenth-century coverings before screw-top preserving jars were widespread.
- 3d. per quartThreepence a quart, an indication that gooseberries were cheap and worth preserving in bulk. The book routinely gives a probable cost as a guide for household budgeting.
Bottling fruit in plain water and finishing it with sugar only at the moment of use was a common English preserving method of the nineteenth century, and gooseberries were its ideal subject: they crop enormously over a few weeks in June and July, they are sharply acid, and the hard green fruit that is useless for eating raw is exactly what tarts and fools want. The demonstration by Nicolas Appert in the early 1800s that food sealed in glass and heated would keep gave such practices a rationale, though domestic fruit bottling in England was already in use before him and long before anyone understood the microbiology involved. What separates this entry from modern canning is not the idea but the hardware. The reader here had corks, sealing and bladder; the screw-band glass jar with a rubber ring, and later the lidded jar that seals under vacuum, arrived through the second half of the century and gradually made these instructions obsolete. The brandy poured on top, and the insistence that the fruit be picked on a dry morning and used the same day, are the marks of a method working at the edge of what it can reliably do.
