Gooseberries, Green, to Preserve Whole
Pick the tops and stalks from some large green gooseberries, put them on the fire, in a saucepan of cold water, and let them simmer gently until they are tender, but unbroken. Throw them into cold water, and for every three-quarters of a pound of fruit make a syrup with a pound of loaf sugar and pint of water. Let the syrup grow cold, put it again into a saucepan, and lift the gooseberries gently into it. Let them boil until the sugar has got into them, then take them out carefully, and the next day drain the syrup from them, and boil it until smooth. In order to ascertain when this degree is reached, dip the finger and thumb into cold water, and take a little syrup between them. If, when they are opened, a strong thread forms, let the gooseberries boil once more until the syrup is thick. Let them cool, put them into jars, pour the syrup over them, cover securely, and keep in a cool dry place.
A two-day sugar preserve of the old school, where the fruit is poached whole, then candied in a syrup that is boiled down in stages. The whole point is intact berries, so heat control at the start decides the result.

Green gooseberries were one of the great fixtures of the British kitchen garden in the nineteenth century, valued precisely because they arrive hard and sour in early summer, well before other fruit, and because their high pectin and acid make them behave well with sugar. Competitive gooseberry growing was a serious northern English pastime, with clubs and prize shows for the heaviest berry, and Cassell's assumes a household with a bush or two in the garden and more fruit than it can eat fresh. Preserving them whole rather than as jam belongs to the older confectioner's tradition of "wet sweetmeats" - fruit candied slowly in successive syrups, then kept in jars to be served as a dessert or used to garnish creams and tarts - a technique that had passed from professional confectioners into domestic manuals by the time this dictionary appeared. Gooseberries never took equal hold in the United States, partly because the bushes host white pine blister rust and cultivation was restricted in many states in the early twentieth century, which is one reason the fruit reads as distinctly English to modern readers.
