Mock Turtle Soup

Put three cups of black beans into three quarts of cold water Sim- Reheat with a soup bone, half a dozen cloves and a small red pepper. mer slowly four hours and press through a purèe strainer. and cook five minutes. Put a hard boiled egg chopped fine, a slice of lemon and a tablespoon of catsup into the tureen and pour the hot soup over it.

BLACK BEAN (Turtle) SOUP.

One pint of beans soaked over night in one gallon of cold water. In the morning add one-half pound of salt pork, half a pound of beef, one or two onions and carrots grated, pepper and salt and herbs (if you like); when the soup is done strain through a colander, mashing the beans. Before serving add wine, some slices of lemon and balls made of the yolks of hard boiled eggs.

To make balls take raw yolk of egg and mix with hard-boiled yolk and shape with hands dipped in flour.
