Baked Sausages

Put a dozen sausages on a baking-dish, alternating with 12 strips of bread cut of an equal length with the sausages. Prick the sausages, and bake for fifteen minutes; baste with their own liquor a few times, and when done, serve on a small hot platter with a sauce-boat of hot madeira sauce.

For the Modern Kitchen

A plain chafing-dish-era supper dish: sausages baked with bread fingers that soak up the fat and stand in for toast. The original gives no oven setting, so the timing is the part that needs attention.
