Boiled Icing

Boil 1 cupful granulated sugar with 1/2 cupful water till it ropes when dropped from fork; pour gradually over stiffly whipped whites of 2 eggs, beating hard. Add flavoring, and use at once.

For the Modern Kitchen

This is Italian meringue under an older name: hot sugar syrup beaten into egg whites until the mass turns glossy and holds a peak. The whole recipe hinges on the syrup, and a thermometer settles in seconds what the fork test leaves to judgment.
