Creamed Mushroom Toast

Stew the mushrooms in a little milk; add 1/4 cupful of sweet butter. Boil until tender. Add 1/2 cupful rich cream, and boil until of a thick, creamy consistency. The beaten yolk of an egg can be stirred in to thicken, or flour and milk as in oyster toast. Serve on hot buttered toast.

For the Modern Kitchen

A short, rich creamed-mushroom sauce spooned over toast — the kind of light supper or breakfast dish that filled the savoury pages of turn-of-the-century compilations. The instructions assume a cook who knows when to stop reducing.
