Fish Cakes

Boil together the heads, tails, fins, and bones of any fish in enough water to cover them. Season with onion juice, herbs, a little mace, and salt and pepper. Mince the fish, and mix together 2 parts of fish to 1 of bread crumbs. Moisten with melted butter and the white of an egg, and fry nearly ten minutes in butter.

Strain the gravy and put it into a stewpan with the fish. Cover the kettle closely, and stew gently for fifteen minutes.

A two-stage dish: a quick stock from the fish frame, then cakes of minced fish browned in butter and finished in that stock. The instructions run slightly out of order, so read the whole thing before starting.
