India Sauce

1 cupful white sauce; 1 tablespoonful curry powder; 2 tablespoonfuls finely chopped pickles; 1 tablespoonful tarragon vinegar or the vinegar from the pickles.

Let all simmer together for five minutes or until thoroughly heated and blended.

For the Modern Kitchen

A cupful of béchamel turned into a sharp curried sauce for fried or broiled shellfish. The whole thing takes about ten minutes once the white sauce exists.
