Lemon Cheese Cake

Beat 6 eggs, 1 pound sugar, 1/2 pound of butter, grated rind of 3 lemons, and the juice of 6. Then cook in a double boiler until like honey. When cold turn into pie-crust shell. Trim with fancy crust pieces, and bake in oven.

This is a lemon curd baked in a pastry shell, and the whole thing hinges on how you treat the eggs. The original gives no temperature and no timing for the oven, so both need supplying.
