Melons (Musk or Canteloupe)

Remove melon from the ice. Cut in half, remove seeds, and fill with cracked ice; send to table on napkin, half a melon being usually allowed to each person. Sugar, pepper, and salt are served with melons. Stewed fruits (dried or fresh) are usually supplied with their own sauce, should be served very cold, and accompanied by a pitcher of cold cream.
