Strawberry Jelly

In strawberry season make the strawberry syrup with 1 pound of sugar to 1 pint of juice. Seal and set away. When making crab-apple jelly heat the strawberry syrup and add half as much crab-apple jelly; boil together a few minutes. The jelly will have the strawberry flavor and the crab-apple will cause it to jell.

For the Modern Kitchen

This is less a recipe than a two-stage strategy: bank the strawberry flavor in June, then borrow the setting power of crab apples in the fall. The chemistry is sound, but the original leaves the proportions and the storage step to the cook's judgment.
