Southern Hominy Bread

Measure and cook I cupful of fine hominy.

When tender take from the fire and let stand for ten minutes, then add 2 well-beaten eggs, I tablespoonful of butter, I cupful of milk, 1½ of a teaspoonful of salt, and 2 tablespoonfuls of fine corn-meal. Pour into a well-buttered earthen dish and bake in a hot oven in a good bottom heat. Send to the table in the dish in which it is baked, serving with a spoon.
