Corn Fritters

3/4 cup flour 1 teaspoon baking powder paprika salt and pepper 1 beaten egg yolk 1 1/2 tablespoons milk 1/2 can corn (or fresh corn) 1 egg white beaten stiff bacon Mix dry ingredients, add egg yolk mixed with milk and corn, fold in egg white. Drop spoonfuls into hot bacon fat (from bacon previously fried and kept in hot place). Lay on a hot platter, garnishing with the bacon slices. Serves 5.

For the Modern Kitchen

A thin drop batter lightened with beaten egg white, fried in bacon fat and served with the bacon itself. The only vague measure is the corn, and the only real technique is keeping the white airy.
