Honey Cake

INGREDIENTS for cake sufficient for 4 or 5 persons. breakfast-cupful of sugar, 1 breakfast-cupful of rich sour cream, 2 breakfast-cupfuls of flour, 1/2 teaspoonful of carbonate of soda, honey to taste. AVERAGE COST, 8d.

Mix the sugar and cream together; HONORÉ CAKE. dredge in the flour, with as much honey as will flavour the mixture nicely; stir it well that all the ingredients may be thoroughly mixed; add the carbonate of soda, and beat the cake well for another 5 minutes; put it into a buttered tin, bake it from 1/2 to 3/4 hour, and let it be eaten warm.

TIME. hour to hour.

SEASONABLE at any time.

Honoré Cake. - INGREDIENTS. - The lower half of a round sponge-cake, a glass of sherry, some meringue paste, sugar, pint of cream, vanilla flavouring. AVER- AGE COST, 1s. 6d.

Soak the cake in the sherry, colour half the meringue paste pink, and put it in little heaps of alternate colours round the cake to make a wall. Bake in a quick oven till the paste is done. When the cake is cold, whip the cream to a froth with a little sugar and flavouring, and fill up the centre of it. To enrich this cake a layer of apricot jam may be put under the cream.

SEASONABLE at any time.
