Orange Lily
1/2 cup white grape-juice 1 teaspoon sugar 2 tablespoons orange-juice Fill glass half full of shaved ice. Add grape-juice, orange-juice and sugar and fill with chilled water. Serve with two straws thrust through a thin slice of orange.
The expression "en casserole" is sometimes misunderstood because the word "casserole" is used in two quite different ways by writers on domestic subects. Properly speaking, a casserole is the coarse clay saucepan, so common in France, in which meats and vegetables are not only cooked but served on the table. In its other usage the word is applied to a case or mold of potato, rice or fried bread, inside of which is placed some preparation of meat or vegetables. The word in this case really signifies a border or croustade. Directions for using this second form of casserole will be found in the chapter on entrees.
A single-glass soft drink from the era of the soda fountain, built in the glass with no shaking or stirring beyond what the ice does.
- White grape-juiceThis means unfermented juice pressed from white (green) grapes, sold bottled and pasteurized. Sweetness varies between brands, so taste before adding the full teaspoon of sugar.
- Shaved iceShaved or finely crushed ice, not cubes -- it chills the drink almost instantly and gives the slushy body the recipe depends on. A few seconds of cubes in a blender or a canvas bag and a mallet will do it.
- Dissolving the sugarGranulated sugar will sit at the bottom of a glass of ice water. Stir it into the orange juice first, or use a spoonful of simple syrup instead.
- Chilled waterPlain cold water is meant. Sparkling water makes a livelier drink, though it changes the character and is not what the recipe calls for.
- YieldOne glass, roughly 8 to 10 ounces once the ice and water are in. Scale directly for a jug, but add the ice per glass rather than to the batch.
- The garnishA thin wheel of orange pierced by two straws, as the recipe directs. Cut the slice thin or the straws will not go through cleanly.
