Suggestions to the Dispenser.

The soda water apparatus, aside from being the most imposing and profitable addition one can annex to a suitable business, attracts trade to other departments.

Dispensers must not loose sight of the fact that the purity of the beverage is judged by the exterior appearance of the apparatus and its surroundings.

A placard in the show window displaying the name of new additions to the general line of beverages dispensed, will assist quite materially in increasing the daily sales. A tumbler washer, in addition to affording an opportunity to place before your customer a clean and cold tumbler, presents a very ornamental and attractive appearance, in connection with the apparatus. The person in charge of the soda water department should be competent, familiar with all the various parts of the apparatus and the manipulations necessary to attractively dispense the large assortment of beverages now offered the public.

To obtain perfect refrigeration of the water, the ice should be placed in the apparatus in thin layers; after covering the coolers with finely broken ice, the pieces in each layer placed upon it should gradually increase in size until the ice box has been completely filled.

The interior of the apparatus should be washed out at least once a week, and thoroughly cleansed from the sediment deposited by the ice. This is a very important matter, and, if persevered in, effectually preserves the apparatus, besides keeping it clean and sweet.

Correct Dress for Dispensers.

The progress of the age has been marked in a great degree by the prominent tendency to personal appearance and cleanliness in all marts of trade and especially in the lines that pertain to eatables and drinkables. Trade today demands cleanliness and purity, especially in palaces of sweets and delicacies. The up-to-date tradesman of the present age realizes that he must make his establishment attractive and he also knows that to obtain this result he must uniform his soda fountain men in neat, dressy and immaculate pure white clothing, and keep everything about his establishment correspondingly attractive. An elaborate soda fountain that costs much to establish in his store may have its luster dwarfed by untidy appearing men behind the counter.

Tradesmen in all walks of business life today adopt suitable dress uniforms; and the correct uniform for a soda mixer and dispenser is a military
