Syrup (I ounces lb gallons Grate)

I2 2 ounces 1/2 lb. 1½ gallons Grate the peel of the lemons, rub in a mortar with 12 pound sugar and the fruit acid. Add the juice and let stand two hours. Strain through a cloth and wash with the syrup by straining through the same cloth. Agitate thoroughly.

Lemon Syrup.

To I quart American Lemon Juice add 5 quarts simple syrup. Mix thoroughly, and add 1 ounce American Sicilian Lemon Extract.
