This chapter is not intended as a complete treatise on cooking. It merely contains a few helpful hints for those who wish to prepare foods correctly. Proper cooking is as important as correct combining, and cooking is a noble art in itself, worthy of a complete volume.

To those who desire to give the art and science of cooking the serious attention it deserves I commend the book ADVENTURES IN COOKING, by Rasmus Alsaker, M.D., as it contains many of the recipes mentioned in this menu book.
