Buttered baby beets surrounded with mashed potatoes and served in timbale cases

Salad: Cold cooked cauliflower and sliced cucumbers on lettuce leaves, red mayonnaise dressing (color with beet juice)

Watermelon and Honeydew melon balls (or strawberry and vanilla ice cream)

This holiday usually occurs on a warm day and it is best not to go to extremes in overeating, for the body does not take kindly to an excessive food supply when the mercury climbs high.
