Chicken Custard

When boiling a fowl for salad or other purposes take a pint of the broth. Season as needed with salt and a little pepper. Heat and pour very slowly over two eggs that have been slightly beaten. Cook in a double boiler until the mixture thickens.

Pour into small cups that have been rinsed with cold water and set away to chill. This makes a good relish for an invalid.
