Fried Calf's Brains (Drop the brains in cold water)

Drop the brains in cold water, changing it until they look nice and white. Then carefully pull off the membrane, put in a sauce pan, add one teaspoonful of salt, a little onion, one blade of mace and four tablespoonfuls of vinegar and cover with boiling water. Simmer for fifteen minutes gently, then drain and break into small pieces with a fork. When cool add one-half of a teaspoonful of salt, one-quarter of a teaspoon of paprika and one egg well beaten. Heat one tablespoonful of butter or lard in a pan and when very hot drop in the brains by the spoonful; when brown turn carefully and brown on the other side. Serve very hot.
