Broiled Sweetbreads with Tomato Sauce

After parboiling and blanching the sweetbreads, dust them with salt and pepper; roll in beaten egg, then in fine bread crumbs; broil over hot coals, or saute in hot butter until a golden brown. Have squares or rounds of delicate, crisp, well-buttered toast on a hot platter, put a portion of sweetbreads on each piece, and pour around them a hot tomato sauce.
