Cod Tongues with Egg Sauce

Soak the tongues overnight in warm water, changing it once. Put them in boiling water and boil for ten minutes. Have hot pieces of toast on small platter, brush the tongues with egg sauce, and serve them on the toast.

For the Modern Kitchen

A Newfoundland and Maritime staple written for a cook who already knew what egg sauce was and had a barrel of salt fish in the pantry. The overnight soak is the whole recipe: everything else takes fifteen minutes.
