Creamed Lobster on Toast

Make a rich cream sauce well seasoned with cayenne. Dice the lobster, squeeze a little lemon juice over, mix, and let it stand a few minutes. Add it to the hot sauce, let it simmer, not boil, five minutes, and serve on a hot platter on rounds of buttered toast. To a pint of diced lobster allow a pint of sauce.
