Devilled Crabs

Mix 2 Cans of crabs with 1 cupful of cream, 2 tablespoonfuls of Worcestershire sauce, 2 tablespoonfuls of melted butter, half a cupful of rolled cracker crumbs, a wineglassful of sherry, the yolks of 3 hard-boiled eggs, a little nutmeg, and pepper and salt to taste. Bake in shells, sprinkle with cracker crumbs, and place a small piece of butter on each.

For the Modern Kitchen

A late-Victorian chafing-dish standard, written for cooks who kept crab shells in the cupboard and needed no oven temperature told to them. The gaps are all in the finishing, not the mixing.
