Foaming Sauce

Whip white 1 egg and 1/2 cupful powdered sugar to a stiff broth. Whip separately 1 cupful thick cream to a solid froth. Mix lightly together, flavor with 1 tablespoonful sherry.

A cold pudding sauce of the older school: raw beaten egg white folded into whipped cream, sweetened and spiked with sherry. The technique is straightforward, but the sauce is never heated at any stage, and that is where it fails a modern kitchen.
