Piccalilli

1 quart green tomatoes, 1 quart of onions, 1 good-sized cabbage, 15 medium-sized peppers; chop very fine and mix all together, salt well, and leave till morning; then press out all the brine, pack in jars, and pour over a nice cider vinegar. This is an excellent appetizer.

For the Modern Kitchen

An uncooked, cold-packed relish that depends entirely on salt and vinegar rather than heat. The hinge is the draining step: any brine left behind dilutes the vinegar and the jars turn soft and cloudy within days.
