Potato Dressing for Duck

Beat light 2 cupfuls mashed potatoes; add 1/4 cup of cream, 1 tablespoonful butter. Season with 1/2 teaspoonful each of salt, paprika, onion juice, chopped parsley, a teaspoonful kitchen bouquet. Then stir in the well-beaten yolks of 2 eggs; 1/2 cupful of chopped nut-meats may be added to the dressing.

For the Modern Kitchen

A soft, enriched mashed-potato stuffing meant to go inside a roasting duck, where it absorbs fat and drippings. Two cupfuls fills a 4-5 lb duck with a little to spare.
