Sweet Pickled Pears or Peaches

6 pounds of fruit, 3 pounds of sugar, 1 quart of cider vinegar, 1 heaping teaspoonful of cloves, 2 heaping teaspoonfuls of cinnamon. Cook until tender, and pour the hot syrup over them. Put the spices in a bag and cook with the sugar and vinegar. Put in a stone jar with the spice-bag on top, and cover closely.

For the Modern Kitchen

A standard American sweet pickle: fruit poached in a spiced sugar-vinegar syrup, then held in the syrup. The instructions are compressed, so the working order matters more than the wording.
