Hominy Crumpets

Scald and cool I pint of milk, add ½ of a cake of compressed yeast dissolved in 2 tablespoonfuls of warm water, I tablespoonful of sugar, I scant cupful of boiled hominy, 4 cupfuls of flour, 2 tablespoonfuls of melted butter and I teaspoonful of salt. Beat well and let raise over night. In the morning add 1/4 of a teaspoonful of soda dissolved in I spoonful of boiling water. Let stand for half an hour and bake in muffin rings on a hot, greased griddle.
