FAT The total (butter, 2 lbs.; other fats, 1 lb., bacon, 1 lb., cream, 1 pt.,nuts, 1 lb) provides about 160 hundred-calorie portions or 1/5 the needed fuel. This proportion may be raised or lowered by half. The less milk used, the more butter needed. K GROUP NO. 2. A WEEK'S SUPPLY OF FAT AND FAT FOODS No. 1. U. S. Any other combination, consisting of 14 quarts of milk and 1012 pounds of flesh foods, cheese, and eggs, would furnish about the same amount of body fuel. For adults, this proportion may be increased or lowered by half. For 3 children, the milk should not be lessened. See note, page 431.

The separate items are: Milk, 14 quarts; beef, 2 pounds; fowl, 3 pounds; fresh fish, 2 pounds; dried fish, 34 pound; cheese, 34 pound; one dozen eggs, 1/2 pounds; one quart peanuts, 1/2 pound; total, 10/2 pounds. HOW TO ESTIMATE FUEL VALUE OF MILK, MEAT, AND SIMILAR FOODS The fuel value of whole milk averages 6 one-hundred-calorie portions per quart; skim milk, 3 one-hundred-calorie portions per quart. Meat, eggs and similar foods of the protein group, average about 8 one-hundred-calorie portions to the pound. Therefore: 6 X 14 quarts of milk. 8 X 101/2 pounds of protein foods 100-Calorie Portions = 84 = 84 168 This would equal 16,800 calories, which is a little above the required estimate, but sufficiently accurate for practical purposes.

HOW TO ESTIMATE THE FUEL VALUE OF FAT AND FAT FOODS Pure fat, as lard, oils, and shortening fats, averages about 40 one-hundred-calorie portions per pound. Butter averages about 34 one-hundred-calorie portions per pound. Bacon, salt pork, chocolate, and fat nut meats average about 28 onehundred-calorie portions per pound. Cream and nuts in the shell, about 10 onehundred-calorie portions per pound. At a rough estimate the 6 pounds of fats in the above items would yield about 2/3, or 4 pounds of pure fat. 40 X 4 pounds of pure fat would equal 160 one-hundred-calorie portions, or 16,000 calories, the required amount.

A closer estimate would be: 40 X 1 pound oil, shortening fat, suet. 34 X 2 pounds butter. 28 X 1 pound bacon 10 X 2 pounds cream and nuts in shell. 100-Calorie Portions = 40 = 68 = 28 = 20 156 This would equal 15,600 calories, which is sufficiently accurate. Any other combination of cereal foods equivalent to 15 pounds of dry cereals would furnish about the same amount of body fuel. This proportion may be raised or lowered by half. See note, page 431.

The separate items are: Flour (20 cups), 5 pounds; rolled oats (21/2 to 3 cups), 1/2 pound; cornmeal (11/½ cups), 1/2 pound; rice (1 cup), 1/2 pound; macaroni, 1/2 pound; ready-to-eat breakfast cereal (5 to 6 cups), 1/2 pound; total dry cereal foods, 72 pounds. Bread and rolls, 10 pounds.

HOW TO ESTIMATE THE FOOD VALUE OF CEREAL FOODS Dry cereals average about 16 one-hundred-calorie portions per pound. Bread and rolls average about 12 one-hundred-calorie portions per pound. At a rough estimate, three-fourths of the weight of bread and rolls is flour. Three-fourths of the ten pounds above is 71½ pounds, which, added to the 72 pounds of cereals, equals 15 pounds of dry cereals food. 15 × 16 equals 240 one-hundred-calorie portions, or 24,000 calories, which is the required amount. Or, 16 × 72 pounds of dry cereals. 12 X 10 pounds of bread and rolls. 100-Calone Portions = 120 = 120 240 which afford the same number of calories.

No. 4. U. S. Department of Agriculture chart showing sugar and other sweet foods, which together supply about 80 one-hundred-calorie portions, or 8000 calories. Any other combination of such foods which furnishes about 42 pounds of sugar would supply about the same amount of body fuel. The separate items are: Granulated sugar (4 cups), 2 pounds; loaf sugar, 1/4 pound; candy, 3/4 pound; honey (about 2/3 cup), 1/2 pound; syrup (about 2/3 cup), 1/2 pound; molasses (about 23/3 cup), 1/2 pound; jelly, 1/2 pound; total 5 pounds.
