American Currant Juice

Currant Syrup.

I quart 2 quarts I ounce I quart Add enough simple syrup to make 11/½ gallons, I ounce American Fruit Acid, and 34 ounce American Soda Foam.

If 10-pound syrup is used, add 2 pounds sugar, and dissolve in the juice by stirring, or by slight heat, but avoid boiling.

Decoration Sundae.

Serve ice cream in the shape of an egg on a dish. Pour over the cream crême de menthe syrup. Around the ice cream lay 1½ dozen crême de menthe cherries and a spray of menthe.

Defender.

Ginger syrup, 4 drams; lemon syrup, 4 drams; lemon juice, I dram aromatic tincture, 20 drops. Carbonated water, coarse stream, enough to fill two-thirds of a 12-ounce glass. Add a teaspoonful of powdered sugar and stir with a spoon. "Quality rather than variety will make the reputation of the soda department of your business." Delight.

One-half ounce strawberry syrup, 1½ ounce raspberry syrup, 1/2 ounce grape syrup, 1 egg, 1/2 ounces plain cream, ¼ glass ice. Shake, strain, toss and serve.

Delmonico Frappe.

One ounce orange syrup, I ounce sherry syrup, I dash angostura bitters. Serve as any frappe.

De Menthe Pineapple Sundae.

Pour crême de menthe pineapple over ice cream in a sundae dish. De Menthe Sundae.

Fill sundae glass two-thirds full of vanilla ice cream, pour over a ladle of crême de menthe syrup, and top off with green cherries. Dewdrop Sundae.

Fill cocktail glass two-thirds full rich ice cream, fill glass with mint and sherry syrup. Top off with whipped cream and creme de menthe cherry. "Don't Care" Syrup. "Don't Care" is a fancy name, and any syrup will do. We sometimes advise a mixture of the most popular kinds.
