Shaved Ice (I ounce I ounce drams I dram)

I ounce I ounce 2 drams I dram 14 glass Mix thoroughly, garnish with a sprig of mint and a maraschino cherry. Cuban Delight.

Prepare syrup of 3 lemons, 3 oranges, I pound granulated sugar, 4 ounces strawberry juice, I ounce solution citric acid, sufficient carmine solution and water, and enough syrup to make I gallon. Grate the yellow potion of the peel from the lemons and oranges, triturate with sugar, add the juice and enough water to make a solution; strain, and add the coloring and the syrup.

Careless clerks should not be employed at the soda fountain. Absolute neatness in dress should be insisted upon.

Cuban Punch.

One ounce rum syrup, I ounce brandy syrup, I dash angostura bitters, I egg. Fill glass with pure milk and shaved ice, shake well and strain in fancy tall glass. Serve straws and top off with nutmeg. Cupid's Idea.

One whole egg, I ounce champagne syrup, 1/2 ounce Catawba syrup, I dash lactart, ½ tumblerful cracked ice. Shake well and fill with plain soda, both fine and coarse stream. Pour from tumbler to shaker and strain and serve with grated nutmeg.

Currant Punch.

Currant jelly is the main ingredient of this drink. Boil together for 5 minutes a cupful of sugar and 3 quarts of water. Remove from the fire and while the syrup is still hot dissolve in it 2½ pint glasses of currant jelly. Add 3 lemons and 3 oranges, sliced very thin. Then set on ice until chilled and serve in glasses partly filled with crushed ice. Currant Shrub.

Two ounces red currant juice, I ounce powdered sugar, 2 dashes brandy, 1½ glass shaved ice. Shake, fill with plain soda. Straws. Currant Syrup.
