American Soda Foam (Add enough simple syrup) (III)
Add enough simple syrup to make 11½ gallons. 2 ounces 34 ounce If 10-pound syrup is used, dissolve 2 pounds sugar in the syrup by stirring or by slight heat, but avoid boiling. Equal parts raspberry and pineapple juices make an excellent substitute for strawberry juice, the blend producing a fine flavor, similar to the juice of wild strawberries. Sugar Color. Juice of I lemon, I teaspoonful powdered sugar, 1/2 ounce lemon syrup. Mix all in shaker, add 8-ounce glass almost full shaved ice and plain water, shake, strain into glass, pour carefully down side of glass enough blackberry wine to fill top half-inch of glass, top with slice of orange, serve with straw, do not stir.
Sunset Sundae.
A ladleful of vanilla ice cream in sundae cup. Pour over it a thin grape syrup; top with whipped cream and a fresh strawberry. Tamarind Syrup.
The pulp of tamarinds thoroughly mashed. Add an equal weight of water, and press through a moderately coarse strainer. To each quart add 3 pounds of sugar.
