American Soda Foam (Sarsparilla color to suit)

Sarsparilla color to suit. 60 drops I gallon 1/2 ounce Remember that women like a little more syrup and three times as much foam and froth as men like. Never overflow a glass.

Oxford Cordial.

Oyster Cocktail.

Mix and beat well together a tablespoonful each of good tomato ketchup and of strained lemon juice, 7 drops of Tabasco sauce, 1/2 teaspoonful of of strained lemon juice, 7 drops of Tabasco sauce, 1/2 teaspoonful of Worcestershire sauce, a pinch of paprika and the same of salt, lastly stir in a teaspoonful of horse-radish.

Have ready in small glasses 30 small oysters, which have been on ice for one hour. Divide them among the sauce, which has also been set on the ice until very cold. Put 5 oysters in each glass. # Parfait Amour.

An attractive fountain and good soda are better than a fine location. They will draw trade a block away.

Peaches and Cream.

One-half glassful shaved ice, I tablespoonful ice cream, I ounce fresh cream, I dash extract of peach, I tablespoonful crushed peach, I ounce peach syrup. Fill with plain soda, fine stream. Serve with spoon. Peach Cobbler.
