Orange Syrup (Tumblerful I ounce ounces)
1/2 tumblerful I ounce 2 ounces Juice of 1½ an orange.
Shake well, add soda water, and before serving add a small, thin slice of orange or pineapple. Serve with two straws in a 14-ounce tumbler. Ancient Bitters.
One-half glass shaved ice, 4 dashes angostura bitters, 2 dashes elixir calisaya, 4 dashes curacoa cordial, 2 dashes compound tincture gentian, I ounce cherry malt phosphate syrup. Shake well and add enough soda to fill 8-ounce glass. Serve in mineral water glass.
Soda water is a veritable luxury and, when proper materials are used and the drink is scientifically dispensed, there is nothing half so delicious. At all times use "American Whole" and "Crushed Fruits," " Concentrated Fruit Syrups," "Fruit Phosphates," "Fruit Floss," etc., as they are the very best that can be obtained.
Angel Food.
One ounce vanilla syrup, I ounce red orange syrup, 2 ounces ice cream, 14 glass ice. Shake, strain, toss and serve.
Angel Food.
One pint of American Cream Cocoanut and 2 pints plain syrup in bowl on counter. Into one of our No. 35 Sundae glasses turn a cone-shaped measure of chocolate ice cream. Over this turn a ladleful of cream of cocoanut from bowl on the counter; top off with a tablespoonful of whipped cream. Serve with a sundae spoon.
Angostura Phosphate.
Most popular drink in New York is made by adding 1 teaspoonful of angostura bitters to a regular lemon phosphate, in which a little more than the regular quantity of lemon syrup is used.
Angel Wing-Something New.
Draw 11/2 ounces of American Crême de Menthe Syrup in a phosphate glass, fill within an inch of the top with solid soda, stir with a spoon, then float on top of the drink an ounce of sweet cream. Serve without a straw. Anna's Dream.
Juice of 1 lemon, 2 tablespoonfuls powdered sugar, 12 ounce grape juice, 1½ ounce claret wine, small scoop shaved ice, fill glass with plain water, shake, put in 12-ounce lemonade glass, finish with a slice of orange and a cherry. Serve with spoon and straws.
Apollinaris Lemonade.
Juice of 1 lemon, I spoonful powdered sugar, 4 glass cracked ice. Shake, strain and fill with Apollinaris water, add two cherries and slice of lemon. Apple Jack-Frosted.
Six green apples, sour. Stick them with 36 cloves, and half bake them. In a glass or porcelain dish put 36 allspice, I lemon sliced thin, and the apples while hot. Cover all with sugar. Let stand 12 hours. Add 1 quart syrup, and stew until they fall to pieces, except the core, take off the fire before that separates. Let cool, and slice a lemon very thin, and over all 2 bananas. Add 1/4 teaspoonful powdered cinnamon, 2 teaspoonfuls Extract Jamaica ginger, 4 of vanilla, and enough syrup to make 1/2 gallon. Serve 2 tablespoonfuls to glass, with same quantity cream or ice cream, and fill with small stream. See that each glass has a slice of lemon and banana in it. Apricot Cream.
Draw 2 ounces above syrup in a glass with either plain or ice cream, and draw fine and coarse stream soda to fill glass.
Careless clerks should not be employed at your fountain. Absolute neatness in dress should be insisted upon. Apricot Floss Syrup.
