Rock Candy Syrup (Pints pint pints Mix serve)

. 3 pints 1/2 pint 42 pints Mix, serve with crushed or shaved ice.

Manhattan Cream.

Three-fourths ounce pineapple syrup, 34 ounce vanilla syrup, 2 ounces ice cream, 4 glass cracked ice, I egg. Shake, strain, toss and serve. Manhattan Rickie.

One-half ounce lime syrup, 1 teaspoonful acid solution phosphate, 2 dashes angostura bitters, 2 ounces grape juice, I dash sherry wine, I dash rum, 2 heaping teaspoonfuls powdered sugar, 4 glass cracked ice. Add soda water in a coarse stream to fill 14-ounce glass. Decorate with orange and pineapple fruit.

Maple Crusta.

One ounce maple syrup, 1/2 ounce vanilla syrup, 1½ glass shaved ice. Rub the rim of a tall frappe glass with a piece of orange and dip the rim of the glass into powdered sugar, which will adhere to it. Shake the syrup and ice, using a heavy glass and a shaker, and pour carefully into the frappe glass so as not to wash off the crusting. Fill to about half an inch from the top with plain soda. Add slice of orange. Serve with napkin and straws. Maple Frappe.

Two ounces maple syrup, 3 ounces plain cream, large teaspoonful of ice cream; shake well with ice, use only fine stream and serve in bell glass. "Frappe" is simply another name for a well-shaken ice cream soda. A dispenser in a small drug store can serve a frappe as easily as an ice cream soda. Mix as for an ice cream soda and convert into a frappe by putting a common shaker over the glass and shaking it well. Serve with a straw.
