Shaved Ice

Lime Juice Shake.

I 1/2 ounce I ounce 14 tumblerful Shake well, fill glass with plain soda, pour from shaker to glass and serve with 2 straws.

Lime Juice, West India.

Prepared expressly for ginger ale.

Use 6 to 10 ounces to the gallon. Less citric acid is used with lime juice than without.

Lime Slip.

One-half ounce lime juice, 2 ounces pineapple syrup, 2 thin slices orange, coarse stream soda. Serve in large glass. stream soda. Serve in large glass.

Limetta Cordial.

One ounce lime juice, ½ glass shaved ice, 2 spoonfuls powdered sugar, dash angostura bitters; fill with soda, mix, add slice of lime or lemon, or angostura bitters; fill with soda, mix, add slice of lime or lemon, or sprig of fresh mint. Serve with straws.

Lovers' Delight.

Slice a banana in two. Place a spoonful vanilla ice cream in the center, and top off with maraschino cherries, and pour cherry syrup over it. top off with maraschino cherries, and pour cherry syrup over it. Lunarette.

One-half ounce grape syrup, 1½ ounce vanilla syrup, 2 dashes port wine, 2 tablespoonfuls serve. ice cream, I egg, 1/4 glass shaved ice. Shake, strain, toss and ice cream, I egg, 4 glass shaved ice. Shake, strain, toss and serve.

If your fountain is small, serve the well-known popular flavors. Do not attempt to introduce new drinks.

Lynch Frappe.

Strawberry syrup, 34 ounce; pineapple syrup, 34 ounce; sweet cream, I ounce; angostura bitters, I dash; add a small quantity of ice cream and shake well, put in 12-ounce glass; add a little carbonated water, small stream, and ice cream to fill up glass; garnish with pineapple and cherry. # Magda.

An uptown druggist, says the New York Sun, has added another laurel to Herman Sudermann's fame. A blond-haired young woman came into his store the other day, and stepped up to the soda water counter. "I'll take a Magda, with cream, please," she said; and the man in charge mixed a glass of soda which looked, when it was ready, like ordinary chocolate soda. An undecided man standing near the young woman waited until the drink had been consumed, and then asked the druggist what it was. "Oh, that's chocolate and coffee syrup mixed," he said, "and I call it 'Magda.' That's one of the things Magda did in the play that shocked her family when she came back as a famous singer, drink chocolate and coffee mixed. I saw Duse in the play, and read that in the libretto; and I made up my mind then that this summer I should have a new kind of soda, and call it 'Magda.' I put a sign in the window for a few days, and already it is one of the drinks that people ask for most. I don't know whether or not they all know where the idea came from, but they seem to like the result just as well as though they did." This illustrates the value of keeping abreast of the times. A dispenser by occasionally putting on some new combination and calling it after an event or book or play that is at the time creating a furor, can advertise and make popular his soda fountain and increase his business.

Maiden's Puff.

Have some paper cups made about as large as a small saucer with a lace fringe around the top; then take an old style champagne glass, one with an oval bottom, wet it, fill it with vanilla ice cream, and place this in the paper cup with the oval side up. Then cut out a piece of orange rind about the size of a half dollar, cut a round hole through this the size of a cherry, place the orange rind in the center of the puff, and lastly place a cherry in the center. You can get the round punches at a harness maker's. Dispensers who are running specials will find this a good thing. Malted Milk Coffee.

Prepare a syrup of 8 ounces of malted milk, 16 ounces sugar, 21/2 ounces coffee extract, 24 ounces water. Dissolve malted milk and coffee in water. Strain, cool, add coffee extract and color with caramel. Malt Nutrine.
