Ice Cream Cabinets.
Next to making, the keeping of ice cream is an important feature in this business. Too much cannot be said in favor of having an ice cream cabinet. Cream to be good must be well kept, as a good cabinet seems to be the only means of keeping ice cream in proper condition. Furthermore, a cabinet is neat and economical. When ice cream is kept in packers, a considerable quantity is lost daily from cream becoming soft. This is not liable to occur with a cabinet, as the cabinet is in itself a refrigerator, and the dispenser need never be afraid of having plenty of ice cream on hand as it will keep from two to four days in good condition.
To meet the requirements of the dispenser several styles of cabinets have been designed. The Marble Cabinet is built high to stand level with the dispensing counter. This cabinet can be procured in Italian or Knoxville marble, with almost any capacity. It is solidly constructed, lined with heavily-tinned copper, and perfectly insulated with a composition packing, instantly drained and easy to keep clean.
The drain may be directly connected with sewerage pipes, preventing seepage of water on the floor so common with an ordinary freezer, and the stop cock should be shut off at night, keeping packer in salt ice water, and consequently the cream in good condition.
