Directions for Making and Dispensing Hot Soda.

Hot soda is not soda water, but simply hot chocolate, coffee, soups, lemonade, etc., served at the soda counter. To be profitable these drinks must be hot, of good quality, and attractively served. Some dealers serve chocolate and coffee as finished drinks, and some prefer to serve cold syrups, depending on boiling water for the necessary heat.

We, therefore, give instructions in the following pages for both methods. The popular list of cold soda water flavors are flat and insipid when drawn hot. Coffee, chocolate, ginger, tonic, beef tea, clam and tomato bouillon, and lemonade made from the lemon, and other similar flavors, when properly prepared, are delicious hot drinks. Coffee and chocolate syrups may be prepared as a very heavy, extra strong syrup, and served with hot water and cream. Cornstarch, well and carefully cooked, can be added to the chocolate to give it body. Chocolate served as a finished drink, and coffee made with American Condensed Coffee, are the most modern and best ways of serving these popular hot soda drinks.

Do not make too large a quantity of any syrup at first. Make enough for one day, and have it fresh every day. If you make a fresh batch twice a day, your drink will be so much nicer.

In dispensing, first put sufficient cream into the cup, then coffee or chocolate syrup; add hot water from the draft tube, and stir with a spoon. A pitcher of cream should be kept on the counter to reduce the temperature, if necessary. Many dealers use whipped cream as an attractive addition. It is a good plan always to serve a small glass of ice water with your hot drink.

A thin slice of lemon should be used as a garnish for hot drinks that are served with hot water, such as hot lemonade, orangeade, cherry ferri, raspberry royal, etc. In serving, use a china cup, cut glass or silver pepper and salt bottles, silver-plated spoon holder, and bar or soda spoons. These articles should be of attractive appearance, for the popularity of such beverages depends largely upon luxurious surroundings.
