Whipped Cream (Take earthen bowls and tin)
Take 2 earthen bowls and 2 tin pans, each 6 or 8 inches greater in diameter than the bowls; place a bowl in each pan, surround it with broken ice, put the cream to be whipped into one bowl and whip it with an American Whipped Cream Churn. The cream should be pure and rich, and neither sugar nor gelatin should be added to it. As the whipped cream rises and fills the bowl remove the churn and skim off the whipped cream into the other bowl. The philosophy of the process is that the churn drives air into the cream and blows an infinity of tiny bubbles, which forms the whipped cream; therefore, in churning, raise the dasher gently and slowly, and bring it down quickly and forcibly. When the second bowl is full of whipped cream, pour off the liquid cream, which has settled to the bottom, into the first bowl, and whip it again. Keep the whipped cream on ice, and it will stand up good and stiff for a day. IMPORTANT.-The addition of an even teaspoonful of salt to i quart of sweet cream before whipping will make it whip up very readily and stiff, and stand up much longer and better than without it.
This is fountain-scale whipped cream, made in quantity and meant to hold through a day's service. The equipment is obsolete but the method translates directly.
- The churnAn "American Whipped Cream Churn" was a hand-pumped dasher worked up and down in a deep vessel, forcing air through the cream. A stand mixer with the whisk, or a hand whisk in a chilled bowl, does the same work; the instruction to raise gently and drive down hard is simply how you aerate with a piston.
- Cold is the hingeThe double bowl-and-ice arrangement is the whole reason this works. Cream at 40F or below whips fast and stiff; at room temperature the fat will not set into a stable foam no matter how long you work it. Chill bowl, whisk and cream.
- Which cream"Pure and rich" points to a high-fat cream; modern heavy or whipping cream, at 36% butterfat or more, is the nearest equivalent, though the recipe gives no figure. Ultra-pasteurized cream tends to whip more slowly and hold less air than standard pasteurized heavy cream.
- The saltAn even teaspoon to the quart is roughly 6 g in a litre — enough to be tasted, and the author claims it makes the cream whip readily and stand longer. How marked that effect actually is is not well established; modern practice usually stops at a pinch. Taste before committing a full batch, particularly if the cream is going onto sweet syrups.
- Why no sugar or gelatinSugar added before whipping slows the foam. Sweeten at the end, once the cream is stiff, if you want it sweet at all.
- Skimming and re-whippingSkimming the risen foam off and re-whipping the liquid that drains back is a sound way to handle large volumes by hand. With a mixer there is no need — whip the whole quantity at once and stop as soon as it holds a firm peak, before it breaks toward butter.
- Holding a dayUnsweetened whipped cream weeps within a few hours even refrigerated. Kept genuinely cold, near freezing, it will stand as promised; drain any liquid that collects and give it a brief re-whisk before serving.
- YieldA quart of heavy cream yields roughly two quarts whipped.
The "American Whipped Cream Churn" named here is a hand pump — essentially a perforated dasher in a cylinder, a labor-saving device in an era when the alternative was a wire whisk and a long arm. Pressurized cream whippers charged with nitrous oxide, which made all of this redundant, are a mid-twentieth-century development. The author's aside about "the philosophy of the process" — air driven in as an infinity of tiny bubbles — is a decent lay account of foam formation, and the confident tone is typical of trade manuals of the period, which sold both technique and the equipment to perform it.
