Then there are the assorted gelatins to select from; combined with fruit they are an excellent dessert for summer or winter. For those who wish to gain, serve with whipped cream; for those who wish to reduce, serve with crushed fruit or plain.
Raw pineapple acts upon gelatin in such a way as to prevent it from solidifying; the difficulty may be avoided by cooking the pineapple before the gelatin is added.
A gelatin mixture which has thickened to the consistency of egg whites can be beaten with an egg beater until it becomes what is termed "spongy"; if whipped cream is added to the sponge it is called Bavarian Cream. Always serve very cold.
