To Serve Caviare

Caviare is, properly considered, an appetizer and by reason of its saltness is a thirst-provoker as well. In Russia it is served with chopped onions or parsley and a bit of lemon and a glassful of vodka, a strong liquor peculiar to the country, accompanies it. Here it is more usual to serve it spread on buttered brown bread or toast, with a quarter of lemon. Serve on small plates, a small fork accompanying it; or it may be spread on very small bits of bread or toast and piled on a plate which is passed with small pieces of lemon.
