Fruit, Juice Of
For ordinary household purposes the fruit is better pulped. Squeeze out with a wooden spoon all the juice and pulp of any fruit, and strain it through a coarse wire sieve, which will not pass the skins or seeds. To every pound add four ounces of refined sugar. Put into pickle-bottles, and place them up to the neck in a pan of water. Boil, and let the bottles remain in the water till cold. Cork tightly and cover the corks with resin or wax. Time to boil, half an hour from the time the water commences to boil. To ascertain any required quantity of fruit juice for preserving, weigh it, for it is thus much more correctly tested than by measure. Weigh first the vessel intended to hold the juice, and then the juice itself.
This is a bottling method, not a cooking method: the aim is shelf-stable fruit pulp held by heat and sugar. The technique it describes is obsolete and unsafe as a preservation process, so the notes below explain the method rather than adapt it.
- The seal is the problemCorks in pickle-bottles sealed over with resin or wax do not make a reliable hermetic closure, and there is no way to see or test whether the closure has held. Here the bottles are corked only after the contents have gone cold, so no vacuum forms at all. Modern preserving depends on a two-piece lid or a clip-and-rubber jar that visibly seals and can be checked.
- No acidity is measuredFruit juices vary widely in pH. Most berries and currants are safely acid; figs, some melons, ripe pears and overripe stone fruit are not reliably so, and the recipe covers "any fruit" without distinction. Current practice is to add measured lemon juice or citric acid to borderline fruits, or to pressure-process them, and this recipe does neither.
- Thirty minutes is not a specificationA processing time means nothing without the jar size, the headspace, the fill temperature and whether the water covers the jars. Here the bottles stand "up to the neck" in water, so the top of the contents is heated only by conduction and steam, and the coldest point of the pack may never reach a useful temperature.
- Cooling in the waterLeaving the bottles in the pan until cold holds the contents for hours in the range where surviving spores are happiest, and does nothing to help the seal. If you want bottled fruit, follow a current tested water-bath schedule from a reputable extension service.
- Sugar at four ounces to the poundThat is four ounces to sixteen, about a fifth of the finished mixture by weight, well below the 60 per cent or so at which sugar itself starts to preserve. It is a sweetener and a flavour-setter here, not a safeguard, which is worth knowing if you assume the sugar is doing protective work.
- "Coarse wire sieve"Victorian wire sieves were commonly of tinned iron or brass wire, which fruit acid can attack, dulling the juice and giving it a metallic edge. Any straining of acid fruit today should be through stainless steel or nylon.
- Weighing rather than measuringThe closing advice is sound and still worth keeping: tare the empty vessel, then weigh the juice in it. Pulped fruit juice traps air and foam, so a measured pint can vary considerably in actual solids, while a weight does not.
Bottled juice had many uses in a Victorian kitchen: it could serve as the base for jellies, shapes, ices, sauces, summer puddings and invalid drinks through the winter. Bottling in this style spread through British households in the second half of the nineteenth century, generally traced to the earlier French work on heat preservation in sealed vessels, but domestic practice ran well ahead of any understanding of why it worked, and cheap glass bottles with cork-and-resin closures were the common household compromise before purpose-made screw-top and clip-top preserving jars became widely affordable. The insistence on weighing rather than measuring juice is a small sign of the same period's growing appetite for precision in the kitchen, the same impulse that produced standardised cup and spoon measures a generation later.
