For Frying with Larkin Olive Oil

There is no medium for frying so good as Larkin Olive Oil. All the unpleasant fumes of natural fat are avoided. For croquettes, for an ordinary family of six, use one-half pint of Larkin Olive Oil. Put this into a deep sauce-pan and heat until a blue smoke is given off. Place the croquettes in a frying-basket and plunge the basket into the hot oil. If the fat is of the correct temperature, no grease will be absorbed by the croquettes. When the process of frying is finished, pour the heated oil through an ordinary unglazed paper, or a cheesecloth. This will strain all foreign particles from the oil, and it can be used again and again without appreciable loss.
