1 ounce of butter 1 ounce bread crumbs 1 cauliflower Cook the cauliflower first, and pick out all the white pieces, and sprinkle them with bread crumbs, and put over them pieces of butter. Pour the following sauce over: 2 ounces grated cheese 1 ounce butter 1 pint of milk 1 tablespoon flour. 1 teaspoon salt

A Little History

Maître d'hôtel in classical French cookery means butter worked with parsley, lemon and pepper, laid on grilled meat or fish — nothing to do with cheese sauce. In English-language household books the phrase was applied loosely, and turns up attached to dishes a French chef would not recognise; what is described here is essentially a Mornay, a white sauce enriched with cheese.
