Extract of Cinnamon
I gallon 1/2 ounce Mix well and strain.
Violade.
Violet syrup, I ounce; plain soda, 8 ounces. Stir, then draw lemon syrup I ounce. Pour into another tumbler half filled with shaven ice, then add lemon and orange, each 2 slices.
Viola Mint.
Make a syrup of 4 ounces lemon juice; 4 drams peppermint essence; I dram American Fruit Acid, enough syrup to make 32 fluid ounces, and sufficient gum foam. Dispense solid. Crushed Violets.
Draw 2 ounces violet syrup in a soda glass, add ice cream and fill with fine and coarse stream soda. Sprinkle on top of foam a few candied violet leaves.

This preparation for soda fountains is made by adding a little strong tincture of orris-root to water, rendered clear, or nearly so, by filtration through magnesium carbonate, and dissolving in the flavored water enough sugar to make a syrup. Tincture of grass may be used as a coloring, if a green tint is desired.
